APPLE PIE
Combine the flour and butter in a food processor until the mixture resembles bread crumbs. Add the remaining ingredients and as soon as the mixture forms a ball, form a disk, wrap it in plastic and refrigerate for a minimum of 1 hour. Preheat the oven to 425F. Set aside 5 equal-sized apples. Peel and roughly chop the remaining apples and place them in a frying pan with 3/4 cup of sugar and the vanilla. Cook until the apples purÄe, stirring occasionally. Roll out the dough to a 1/4-inch thickness and line a 10-inch pie pan. Prick the base of the pie with a fork. Spoon the apple puree into the base. Peel and thinly slice the remaining apples and arrange them in a concentric circle on top of the purÄe. Sprinkle with the remaining sugar. Bake 35-40 minutes, until golden-brown.
